Olives:

Essentially, there are two types of olives; they can be processed and presented in several ways. Black olives can be purchased with the seed in, and also pitted, or with the seeds removed. The same goes for Green olives they are available with the seeds or pitted, without seeds. Some are stuffed with small onion, almond, and popularly with pimento, or sweet red pepper and are great for hors d'oeuvres and garnish. Black olives make great hors d'oeuvres and a nice addition to salads. Some cooks use green olives in different types of bread stuffings. Both types of olives are perfect appetizers and in some cultures and locales, the olive is served with breakfast foods. They are not high in calories unless one were to eat really a lot of them. The main difference in the two olives is in the food processing method.

Fresh olives are very bitter and must undergo an alkaline preservation treatment to make them into the succulent delicacies we enjoy at the meal table. The olives are then washed and brine water added to ferment and preserve them. Black olives do not turn black while on the branches, but during the alkaline brine and oxygination processing. Approximately 95% of olives grown are used for Olive Oil production and approximately 5% are processed in jars or tins for food consumption at the meal table.
