Koska is a brand name recognized for its high quality products. Koska set up its first factory in 1974 in Istanbul, although its tradition of helva making goes back to an early 19th century helva shop operated by Hajji Emin Bey in the west Anatolian town of Denizli. Koska is known for a variety of high quality products such as nougat, preserves, and, of course, helvas. Koskas current facility is a 135,000 sq. ft. plant in Istanbul dedicated to the production of a distinguished line of confections.

Tahini (Tahin)

Tahini is made entirely from Sesame Seeds. It is a very healthy high protein food containing no cholesterol and has a long shelf life. Tahini is rich in B vitamins and protein, the same as milk.

Tahini (Tahin in Turkish), the past from the ground sesame seeds is a major ingredient in hummus and other dishes from the Middle East. It can be purchased fresh in a jar, canned tin, or dehydrated in powder form. Tahini comes in two types, 'hulled' or 'unhulled'. Both kinds are high in vitamins and proteins. Unhulled tahini has a little bit of a bitter taste, but a much higher content of vitamins, calcium, and protein because the sesame seeds are ground whole.

Tahini paste is used in a wide variety of dishes, and in some restaurants, served as a side dish or garnish. Somtimes it is mixed with lemon juice, salt and garlic, and water added to make a thin very tasty sauce. Tahini sauce is a popular addition to meats and vegetables in Middle Eastern cuisine. Somtimes Tahin is used as the main ingredient in soup; as a spread, tahini can replace peanut butter on bread, though the flavor is quite different.

Many times, Tahini is served on pita bread as an appetizer, sometimes accompanied with salad and olives. Tahini is often combined with lemon juice as a dressing on salads. In Turkey, tahini is often served for a breakfast dish along with meats. It is quickly becoming more common and popular in European cuisine, is now being sold in U.S. supermarkets, and can be found as an ingredient in some prepackaged sandwiches.
