Quince Preserve

The Quince fruit is from the Pear or Rosaceae family, a sweet juicy yellowish green fruit, roundish and narrower toward the stalk end. P ears and Quince came originally from Europe and Asia where the current Quince production is still higher than in the United States. Quince should only be eaten cooked as they are very astringent (drying) and acidic, and would cause the lips and mouth to pucker. The cooked Quince tastes like a pear-apple combination. Commonly used to make Marmelo or Marmalade, the Quince is very high in Vitamin C and dietary fiber, but low in saturated fat, cholesterol and sodium. Whole, raw Quince are very fragrant and make a wonderful room fragrance; excellent for holidays studded with clove.
