Red Pepper Paste

Red pepper paste, in Turkish called Biber salcasi is a thick, dark red paste made from red chili peppers and salt. There are two types of pepper paste: The 'hot' pepper paste is made from hot red chili peppers, and the 'sweet' pepper paste is made from the sweet red peppers. Both types play a large role in Turkish cooking and are used mainly for flavoring main dishes and for filling pide, a Turkish pocket bread, or borek, which is a main dish made of pastry and cheese.
