How to make Good Turkish Tea;
1- Use drinkable water (low iron level).
2- Put 1 tabelspoon of Turkish Tea for every cup.
3- Boil the water.
3- Pour the boiled water to the top part of Turkish Tea Pot which carries the tea.
4- Wait for 10-15 min. to get the perfect taste.
5- Add water to the bottom pot boil, some more water.(You will use the hot water to mix with the tea while pouring to cups. "This is recommended to give the tea lighter taste")

About Filiz Tea - Turkish Black Tea
Filiz tea or Cay is a form of black tea. Produced in Rize Province on the eastern Black Sea coast of Turkey which has a mild climate with high precipitation and fertile soil, it is crystal clear and mahogany in color. Rize black tea is prepared by a Turkish Tea Pot and drunk everywhere in Turkey, anytime.
It is served in Turkish cafes by a cayci (tea-waiter), in small, gold-rimmed, narrow-waisted glasses (ince belli). It can be taken strong ("koyu" dark) or weak ("acik" light).
Drinking Turkish Tea is an important Turkish tradition.
Black Teas
All teas originated from the Camellia tea plant are abundant with polyphenols which are a type of antioxidant. In olden times, tea was mainly used for medicinal purposes and cures. Today, Black Tea is notably enjoyed in all parts of the world, and consumed both hot and iced cold as a refreshment, drinking pleasure and for health. Tea contains amino acids, proteins, caffeine, trace elements and minerals including fluoride, potassium, calcium, manganese ; and vitamins including niacin and B, C, E & K, all of which are helpful in maintaining body health. Nature filled it rich with antioxidants and tea has been linked with cancer prevention, decreased risk of stroke, and reduced blood cholesterol. More study and research is being conducted on the value of tea in contributing to specific areas such as healthy heart function and lowering cholestrol.
Bonus benefits of drinking tea is that it has no calories, no fat or salt, and is a source of fluoride, known to help prevent teeth cavities. Tea is also known to have less than half the amount of caffeine as coffee. Black Tea is simply more oxidized than other teas, is generally stronger and naturally contains more caffeine While green tea usually loses its flavor within a year, black tea retains its flavor for several years.
Black Tea in Turkey
Much tea is produced on the eastern Black Sea coast of Turkey where there is a mild climate and high rainfall with fertile soil; it is quite mahogany in color when brewed. It is a popular drink everywhere in Turkey for anytime of day. It is served in small tulip glasses, and can be taken strong or weaker by water dilution accompanied by two or three lumps of beetroot sugar; never served with milk. A recent finding as late as last year in 2006, a German study determined that the addition of milk blocks the vascular protective effects of the tea.
Turkish preparation of tea is fullbodied and very strong, so that it must be served in small amounts, thus the small containers of traditional tulip glasses.
